On Friday, I hosted some friends for crab night over at the apartment. One of the guest’s family happens to be walnut growers (Sierra Orchards up in Winters,CA) , and they graciously brought over a box of nuts as a housewarming gift.
After a long day’s work, I arrived home today craving something salty and immediately the nuts came to mind. If you are looking for a quick, easy, and healthy snack option, check out my Warm Rosemary Walnuts below.
Quick note- I used Rosemary from my urban balcony herb garden which I planted a few months ago. It really comes in handy for quick snacks like this.
1 Cup Walnuts
1 Sprig Fresh Rosemary
Tbsp Olive Oil (or enough to coat the walnuts)
Salt- to taste
Place one cup of walnuts in the desired bowl and drizzle with olive oil. Place in microwave for one minute. If desired- you may also toast the walnuts in the oven at 325 for six minutes spread evenly on a baking sheet
While the nuts are warming up, finely chop rosemary. Remove nuts from microwave and add rosemary to the bowl. Add salt to taste and toss the walnuts in the rosemary, salt, and olive oil mixture coating the walnuts evenly.
