Sometimes I get home from work, and I am so exhausted that I want to crawl into my bed and be asleep by 6pm- no food, no exercise, no human communication. In the past couple of years, I literally would do this.
Over the last two weeks, I’ve been coming home completely wiped out. It is our quarter end at work which in the sales world means all hands on deck looking to flip every software purchase we can find or pull forward. In my personal life, this means that I am awful to be around, anxious, not sleeping well, and not properly taking care of myself. Thankfully- yesterday my big deal of the quarter came in, and I took a big sigh of relief when I got home. Part of me felt light as air because the stress of that deal not coming in was lifted off of my shoulders. The other part of me felt like collapsing.
Have you ever been running so fast that your body has felt like superwoman, and then for that split second when you finally took a sigh of release—you end up with a fever, exhausted, and a cold? That is me right now.
My body very loudly told me yesterday to Slow Down!
I got home yesterday and managed to sneak in a 30 minute catnap at the end of the day. Old Mona would have most likely slept through the night, but I wanted to get back on track with everything I had pushed aside the last two weeks and refuel/re-engerize my body. I managed to pull myself out of bed, chug two cups of ice coffee, scarf down a gluten free, high protein, Quest Bar for some fuel, and race over to Soul Cycle– aka my happy place.
After an amazing workout, my endorphins were flowing, and I already felt like a new person. That being said, I was shocked by how exhausted I still was after an endorphin boost and two cups of coffee flowing through my blood. I am caffeine sensitive, so even one cup of coffee before a workout gives me the ultimate energy boost which usually lasts through the evening. In this case, I was feeling great, but my body was still telling me that I needed to shut down and get some rest.
Fast forward- I had made plans to make an elaborate healthy dinner and trekked over to Safeway to load up on groceries for the week. I realized that I should probably listen to my body and see what I could pull together for dinner that was both easy and healthy.
Thank GOODNESS for Safeway. For anyone who is looking for something fast, easy, and healthy– let me tell you- it is easier to do than we think. Safeway has a great seafood counter where I found gluten free (almond flour) coconut crusted tilapia. I grabbed a couple of filets, as well as some freshly made Poke (highly recommended! So good) and made my way over to the produce section. Typically, I will make a homemade fresh salad, but to speed things up, I grabbed a Taylor Farms BBQ Ranch salad– YUM, as well as a zucchini and a lemon.
For those who have convinced themselves that they do not have time to cook and/or eat healthy– I’m here to tell you that it is in fact possible. Check out what I ultimately pulled together yesterday in less than 30 minutes (most of which was spent waiting on the tilapia to cook).
Mona’s Quick and Healthy Dinner:
- Coconut crusted Tilapia from Safeway- 25 minutes baked at 350 degrees
- Safeway made fresh Poke
- Taylor Farms BBQ Ranch salad
- Lemon Zoodle Salad
- Spiralize 1 zucchini
- Mix olive oil 2 Tbsp and 1 lemon together in a small bowl
- Divide zoodles into two bowls (makes 2 servings) and toss with lemon/olive oil mixture. Only use as much as needed and store the rest in an air tight container for later
- Sprinkle cracked pepper, red pepper flakes, and grated Parmesan cheese to taste
Let me tell you– after a stressful couple of weeks, and getting hit hard with a head cold- Forcing a solid workout and eating a fulfilling and healthy dinner felt amazing.
I still woke up this morning sick, but I slept like a baby and know that giving my body what it needs to recharge is crucial.
For all of you out there who have made numerous excuses about time and not being healthy– it is definitely possible. I’ll try to keep including ideas of quick and healthy meals under 30 minutes.
